Happy Anniversay!

So- I've been married for a year now... a little crazy! It seems like its flown by super quick!

Jason was really sweet and surprised me with flowers.



Now I bet you are just loving the Nalgene vase... I have apparently left and forsaken all vases in Utah. Oh well.

He also got me some Twix, but who really needs a picture of that?

But it was a pretty good day. We ended it with trying something new...of course cooking!



Homemade pasta noodles and tomato sauce.

The recipe and more photos are soon to follow... for another post :)


But it was nice to make something together.

So one year down. Many, many more to go!

Chillin' in South Dakota... not Literally! It's Been Quite Warm.

So, many of you may have been asking "What has Sarah been up to lately?"

The answer most of you have gotten is probably "Not much!"

Well, now I have some documentation to show it's true...to an extent :)

I have found my blog posts consist of two topics usually:

I'm not sure why, but I sure do love cooking, eating, and looking for new fun recipes to try. Good thing Jason likes food A LOT too.

I'm not quite sure where that came from, but it seems I'm unstoppable.



Well, no worries, my current post will not surprise you because with all this said, I'm pretty sure you can guess what I've been up to...



Starting with Food!


Here's the glory of my bread making.















We've finally figured out how to make really good and chewy bread that has the right amount of crusty-crust. I've realized I have become a food snob when it comes to homemade bread. Its all about being fresh, or its just no good!


Here is some Orange Chinese Chicken and Rice... and Broccoli of course...ok more Broccoli Stems rather than Flowerettes :(















I made it with a can of Mandarin Oranges. We really liked it. It had a bit of spiciness to it as well. Mmmm!


The other day I did make homemade enchiladas... from the tortillas to the "green" sauce, but unfortunately the most exciting about it was how I broiled the cheese on the top to make it nice and toasty...ergo, no pictures... not until I perfect this one.


So, this means I can freely move onto my next topics: CRAFTS!

I have started knitting. Yes, you heard me correctly, KNITTING. And not just anything, I have started knitting socks.
















Who knew I'd be knitting socks ? (other than Susie who gave me some awesome supplies to get started)















And (so far) they actually look like socks! All I got to say is you better be careful when Christmas comes around... cos I have a whole bunch of tricks up my sleeve :)

So far so good, but I'll keep you posted with the final product... or should I say products since there will be 2!

Well, so much for my two fall back topics... I guess this is the end of my blog...













HA! Not so fast! I'm not done yet.


Another exciting thing I've been working on with Jason is our greenhouse. We planted our seedlings last Saturday and today, Thursday, here is the progress of our little seedlings thus far.

Now, you might ask, " What in the world is MESCLUN?"

Mesclun (I have learned) is just a blend of lettuces that are pretty good. We had some growing last year and it was purple... that's the extent I know about mesclun.


I'm just glad they are sprouting.


We are still waiting on our peppers and tomatoes to make some sort of action, but it hasn't even been a week.



So here's to the little garden. So far so good!

Method to the Madness!

So this is my first year officially participating in the annual NCAA March Madness. The funny part is I have no idea about the majority of the teams... however, I did put BYU losing in the second round...am I good or am I good?

Tournament Challenge

In this friendly competition, I would like to say that I am winning...at least for now. It's gonna hurt me that I put Utah State going as far as I put them :( I let the heart strings make that decision, apparently.

But wish me luck. It's been kind of fun seeing how my predictions went and seeing all the upsets.

Got to Love Saturdays

There's nothing like a good ole Saturday to catch up one missed blogging.

Not much going... but my never fail hobby of cooking and baking comes to the rescue for a blog entry.

Today's topic: TORTILLAS

I've bought hundreds of tortillas at the store for wraps, tacos, enchiladas, fajitas, etc... a very versatile item. I even remember being at a friends one time and they had tortillas that you could cook up yourself. I thought the was BIZARRE.

Never did I think I would ever make my own flour tortillas, but then again, here I go surprising myself.

Tortillas are surprisingly easy. And you don't really even need a tortilla press. Rolling pin all the way.

So here's the recipe:

  • 2 cups of white flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. vegetable oil
  • 3/4 cup warm water

5 Ingredients. That's it!

You combine the flour, salt and baking powder all together in a bowl.

In another bowl combine the oil and the water.

Add the water mixture to the flour mixture ONE TABLESPOON AT A TIME.


You just mix it with a fork. Just slowly add the water. Boring as it may seem...this is the key.

Once all the water is in there, the dough will be sticky... DO NOT let this alarm you.




Pour the sticky dough onto a floured surface. Flour is your friend.

You need to knead the dough for 4-5 minutes. Add flour as needed to keep the stickiness down. You will knead it till the dough is nice and smooth.

Once you have your knead ball of dough, place it back into the mixing bowl and cover with a damp cloth (or damp paper towel). Let the dough rest for 20 minutes.

You let it rest to have to gluten in the flour settle. This will make the dough easier to roll out in the end. SO LET IT REST! USE a damp cloth so they don't dry out.

After resting break the dough ball into golf ball sized balls. You can make 10-12 little balls from this recipe. You can pinch off the dough with your thumb and fore finger.

Place the dough balls on a tray, make sure they do not touch each other. Once they are all rolled into balls and on the tray, cover them again with the damp cloth and let rest for 10 minutes.

After 10 minutes, now you are in business.

Take a dough ball and flatten it with your palm on a floured surface. Flatten it out till its about 3-4 inches wide (and in the shape of a circle).




Then use the rolling pin to roll it out. Try to roll it as thin as you can (maybe 1/8 inch thickness...I just eyeball it). The thinner the better, because when you fry it up, they get thicker.

So roll it out, flipping the tortilla from from the back as needed.

You can stack your tortillas as you're rolling them out only if you FLOUR BOTH THE TOP AND BOTTOM, so they don't stick together.



Once you have them all rolled out, time to cook them!

Have you stove top on a medium high heat- it is suggested you use cast iron, but I just use a skillet that works... call me simple!

But once the skillet is preheated, just toss the first tortilla on. You want to cook about 1 minute per side. Don't over cook or they will be flaky and hard.

Cook em' up and eat em!. You can store them temporarily in a dishtowel, or once they've cooled in a plastic bag.

It's suggested to refrigerate any leftovers (if there are any!), but just remember they will need to be warmed up the next time you use them or they will be brittle.

If you freeze the tortillas, wrap tightly in plastic wrap and put them in a ziplock bag. When you are ready to use them, first thaw at room temperature and then wrap them in foil and place them in a 250 degree oven for a 10 to 15 minutes.


So tortillas = success!

Baby Blanket for... a Baby... Of Course!

No, I'm not making any announcements... other than I have finished making a baby blanket for Jason's sister.

Sure, little Mallory was born in January, and I started this blanket all the way back in October, but all I have to say it "Thank Goodness, it's finally over!" It was a lot of hand stitching, and I'm still not totally proficient with binding blankets, but I think its still pretty good.
















It's a little quirky, with wobbly edges, but I have never been one for measurements and preciseness.

















For the bottom fabric I just used a fleece blanket. I really doesn't hide my imperfections of hand stitching, but it definitely does give it a "home-crafted" look.















And here's a detail of the hand stitching.

I really like all the colorful fabrics. Hopefully it won't be color overload for little baby Mallory.

One more craft project off the list!

If It's Not Broke, Don't Fix it!















Notice the picture. I have used this picture in a previous blog. This is an epic picture.

This picture signifies the last picture I took with my camera that I could actually see in the LCD screen. Moments after I took this photo, I switched Jason spots on that very tall platform. I also was very foolish and left my camera in my pocket.

The result was the demise of my LCD screen.

For 7 long months Jason and I have been taking pictures with my camera and hoping for the best. Hoping no one is blinking or making a funny face because we really can't see what we are taking pictures of. It's like I'm living life on the edge somehow.

Well, a day after my birthday, I finally have all the parts to fix this heinous crime. I ordered an LCD that was compatible for my camera, and Jason and I had the hardest time finding those teeny, little screwdrivers.

So sorry for the lack of pictures of fixing my camera (Obviously I couldn't take pictures of my camera while I'm fixing it! DUH!)

By no means do I want you to watch a boring clip on YouTube of some guy with freaky long fingernails fix a camera- but just in case- its there.

This is the screen. Obviously the offending one. This shape on the screen was the only thing that would appear when I would turn it on. I'm really glad its gone!
















And here is all the utensils I used. My favorite was the tweezers.
